They were beautiful, just like their parents. My older son humored me as I checked on them throughout the day. I'd greet them in singsong, ask after their kin, make sure they were happy. Together, we watched the parents come and go, but mostly we'd observe the hatchlings flutter their wings and grow bigger and bigger in a nest built for two. "You know what's going to happen, don't you?" my son asked me. My eyes widened. It really hadn't occurred to me. . Yesterday, I opened the door and all four of them were gone. Their constancy softened me, and eventually, for reasons I can't explain, we became family. The mother bird spent a lot of time in that nest. But the mercury thing, which is not especially breaking news, had gotten to the point where every time I slsur la1515sur la table5700nt, and safe, alternative to canned tuna.Ahoy....Recipe for Tuna, Black Rice, and Arugula Salad Choose low-mercury canned tuna (Google the phrase "low mercury tuna" for options) for this refreshing salad, which pairs black rice with peppery arugula and a quick lime vinaigrette.Serves 2 for lunch or 4 as a side salad3/4 cup black rice (I use this one)1-3/4 cup water1-1/2 cups arugula, packedOne 6-ounce can low-mercury tuna in olive oil, flaked and, if desired, drained'Juice of 1 lime(2 tablespoons extra-virgin olive oil)Prepare the rice according to package directions or in a rice cooker.  Scoop out onto a rimmed sheet pan and allow to cool.Arrange arugula leaves in a medium salad bowl.  Stir in cooled rice and flaked tuna.  Whisk the lime juice and oil in a small bowl and pour over salad.  Give a quick toss, and serve immediately.'You're welcome to drain the tuna into a small bowl and whisk the oil from the can with the lime juice, obviating the need ftable5200sur la table

They move the chickens around -- this one here, that one there -- taking pains to ensure even cooking. The poultry spins, its glossy juice anointing potatoes underneath. The spuds accept this benediction like so much holy water. When my order's ready, I grab the chicken, the warm potatoes, and make my way across the market. I move towards corn, towards spinach, bell peppers, and peas. She's the one whose name now escapes me.  When the July session ended, and I went to hug her goodbye, her mother asked if she could hire me for three weeks as her daughter's full-time sitter. The timing was perfect. With just a month left before heading back for my senior year1_b@b_1Haverford, I'd get more time with this kid I adored, get paid for it, and continue to speak French, since her parents really wanted to extend her exposure. Each morning, I'd go to her apartment. We'd play games on the floor and speak French when her mom was around, and then around noon we'd head out to the park. Day in and day out, her mother would pack her favorite lunch: a smoked mozzarella and cucumber sandwich in a brown paper sack. She'd pack one for me, too. We'd play in the park, nibble our sandwiches, and laugh in a foreign tongue while the August sun licked the back of our knees. ... But enough about me. Let's talk about meatball subs. That the meatballs are soused with tomato sauce, which oozes out of the sandwich and onto the table, your t-shirt, and your lap, somehow ups its value prop. This is not prissy food. 2043 167I had no idea what she was talking about.  This woman had worked with me for months. She knew how I dressed. I wore pleated pants and v-neck sweaters. Humdrum flats and basic shirts. Skirts whose hems fell neither above the knee nor below the knee but right1_b@b_1the knee in that exact wrong way. I owned precisely zero wool crepe suits. I mean, I was 22 years old.   So you know what? I packed what I had: my boring skirts, my basic footware, my boxy blazer. And somehow, I looked fine. I survived. (Well, to be honest: I landed1_b@b_1LAX1_b@b_1midnight and had to rent my first car. And they were out of sedans and tried to rent me an 8-person van. When I walked out to the lot and saw how big it was, I cried. Let's just say they found me a sedan.) I drove. I got to the hotel. It was the Beverly Wilshire, fancy as all get out. And that week, I did my job. I slept in my posh hotel. I drove my rented sedan. I felt like a million bucks. I didn't need a wool crepe suit after all. sur la1543sur la table4430 and pop, 3 to 5 minutes. Transfer to a plate to cool. In a food processor, grind the basil, garlic,toasted pepitas, 3/4 teaspoon salt, and 1/4 teaspoon pepper. With the machine on, slowly stream in the 1/2 cup oil through the feed tube. Process until fully emulsified, about 1 minute. Scrape into a medium bowl and stir in the cheese. (Keep the oven on.) Open the foil carefully. (Steam will billow out.) Slit the tops lengthwise and, with gloved hands, press the ends toward the center so the insides fluff up. Use a fork to lightly mash the potatoes and flatten them, spreading the foil and creating surface area to hold the cheese and vegetables. Sprinkle a small fistful of cheddar over the potatoes and top with a spoonful of vegetables. Return to the oven for a few minutes, just until the cheese melts. I wrote about this a few months ago when I made these little goji nibby nuggets, which were very directly inspired by the Lemon Date Bars my friend Tracy made. And I do love them, still. But I also wanted to make more flavors, more varieties, more, more, more, because I1_b&b_1grabby that way, so go ahead and add Grabby to the list of qualities I1_b&b_1somewhat but not completely ashamed of. Also, Impatient. The Middle Eastern market near me has all kinds of treasures, and each time I wander in there I find more stuff. This place is smaller than the one where I found the za'atar, but it's right next to the farmers' market so I pop in there most Sundays. They've got three kinds of feta (from France, Bulgaria, and Greece), great flatbreads, and -- I just discovered -- date paste. I know. It's date PASTE. It's like a block of shmushed up dates just ready to be used for whatever. You don't have to pit the dates because they've already been pounded into a pasur la1260sur la table3656 Be sure to let these firm up in the fridge for several hours before cutting them into neat bars. Then wrap each one individually in parchment or wax paper, and store in the freezer. Defrost for 10 to 15 minutes1_b@b_1room temperature.
